Rice Pudding with Salted Caramel Sauce

Ingredients :
- 170g short-grain rice
- 1000g milk
- 45g sugar
- 1 vanilla pod
- 1 egg yolk
- 30g butter
- 200g heavy cream
Method :
- In a saucepan, boil the rice for 2 minutes, then drain in a colander.
- Place the milk, sugar, and split and scraped vanilla pod in a saucepan with the rice. Bring to a boil, cook for 17 minutes, stirring well, then add the egg yolk and then the butter.
- Transfer to a dish and refrigerate for 2 hours.
- Whip the cream and gently fold it into the rice pudding.
